Otter Cove Flavor Profile Characteristics

Otter Cove Oysters are a Pacific Northwest oyster from one of the North Puget Sound oyster appellations in Washington State.  They start as an Intertidal Beach Cultured Oyster but are then taken to Snow Creek Seafarms to be finished by the rack & bag method.  This is opposite of how it is usually done, which is to go from rack & bag to the beach.  This process allows them to fatten-up before harvest on the nurtrient rich waters of Discovery Bay.
